One of the restaurateurs responsible for bringing Chinese cuisine to America, and making us fall in love with it, is Ed Schoenfeld, the owner of RedFarm in New York City.
We had the pleasure of talking with him about his four decades of work in the restaurant business and one of his creations, the pastrami egg roll, that uses the iconic Katz's Deli's pastrami.
We were shocked to learn that Shoenfeld's restaurants are the largest buyer of that pastrami. That's a lot of egg rolls.
Shoenfeld's storied history is fascinating. If you've ever had General Tso's Chicken, and, really, who hasn't, you have him and his partners to thank. There's an entire documentary that hyper-focuses on just that one dish in which Shoenfeld appears. "The Search for General Tso" is currently available on Netflix.
RedFarm features many handmade items on their menu, lots of dumplings, which sell out daily.
