WATCH | When you hear "lobster pizza," you might think of a few nearly-hidden bites of the crustacean floating around in a sea of cheese and dough. But that's definitely not the case at Florian, a restaurant that's serving up an entire lobster on their pizza. (And yes, that does include its head.)
A secret recipe
We met up with the NYC restaurant's executive chef, Brando de Oliveira, to get a closer look at how the Instagram-ready pizza is made. He walked us through pinches of salt, the arrangement of the pre-cooked lobster and drizzles of olive oil. He was happy to share the sauce recipe and the cheese blend.
But when it came to the dough, the Bologna-born chef remained tight-lipped. "I can't give you the recipe," he said. "We brought this from Italy 22 years ago."
"It's special because it has one pound of lobster on top of the pizza," de Oliveira said of the pie's allure to foodies from all over. And of course, there's also the matter of that photogenic lobster head, propped up by slices of lemon.
Diners from around the world
The restaurant has had diners from all around the world visit simply for the opportunity to taste (and photograph) the lobster pizza. The unique dish has become one of the most popular entrées at Florian, both for its unbeatable combination of ingredients and its looks. That's no surprise, given our obsession with sharing food pics on social media.
"It's incredible how people come from Japan, from Indonesia, and from other parts of Asia just to take a picture of the lobster pizza," said de Oliveira.
For people who like lobster and pizza (aka everyone), the dish is a dream come true.
It's one pizza you definitely won't want to share.
