For our Eat This series, we eat a General Tso's Pig Head. The cooks at The Cannibal smother their gourmet version of the Chinese takeout sauce on an entire pig's head: ears, snout, eyes and all.
"It's food that you can get your hands into, you can eat it how you want to, and you get to try out all the different flavors and textures that you're going to get off of one part of the body," said Joshua Resnick, a sous chef at The Cannibal. "You get to try the crispy skin, you get to try the different textures you're going to get with the tongue, the ear, the jowel, all on one plate."
We tried the Pig's Head by breaking off different pieces, and eating them either on their own or wrapped in a pancake with an accompanying broccoli rabe salad.
